Ingredients/Components

  • vinegar - 2 Tbsp
  • lemon juice - 4 Tbsp
  • salt and pepper to taste - 1 item
  • cloves garlic, crushed - 2 item
  • onion - 1 item
  • bay leaves - 2 item
  • cayenne pepper - 1/4 tsp
  • green pepper - 1 item
  • red pepper - 1 item
  • cumin - 1/2 tsp
  • ground coriander - 2 tsp
  • olive oil - 1/2 c
  • round steak or chicken or combination of both - 3 lb

How to make fajitas:

Cut meat, onion and peppers into thin strips. Combine remaining ingredients and add meat, onion and peppers. Marinate in refrigerator for 24 hours. Take meat strips out of marinade with tongs. Grill or broil meat slowly. Drain marinade and saute peppers and onion in 1 ounce olive oil until crisp-tender. Serve with 10-inch flour tortillas, sour cream, shredded cheese and picante sauce.
