  • Then take out vegetables and fat chicken parts

How to make escarole soup:

Cook slowly until tender (2 1/2 hours). Then take out vegetables and fat chicken parts. Put in escarole and little meat balls.Little Meat Balls:1 lb. mixed veal, beef or pork2 eggs salt and pepper bread crumbs grated cheese croutons (on top)
