English muffins
Ingredients/Components
- dried yeast - 2 pkg
- warm water - 2 c
- margarine - 1/2 c
- salt - 4 tsp
- sugar - 1 Tbsp
- flour - 5 to
- cornmeal - 1 item
How to make english muffins:
For Bran Muffins: Replace 2 1/2 cups of the flour with bran.For Cinnamon-Raisin Muffins: Add, when putting in flour, 2 teaspoons cinnamon and 1/2 cup raisins.
Soften yeast in warm water. Add shortening, salt, sugar and 3 cups of flour. Beat until smooth. Add flour to make a stiff dough. On floured surface, roll out to 3/4-inch thickness. Cut with 4-inch round cutter. Place on ungreased cookie sheet, sprinkled with cornmeal. Let rise in a warm place for 30 minutes. Be sure to sprinkle cornmeal on top before rising. Heat electric skillet to 325°. Gently slide spatula under muffins. Place in skillet. Bake 12 minutes on each side. Cool.
