English muffin bread
Ingredients/Components
- sugar - 1 Tbsp
- salt - 2 tsp
- water - 1/2 c
- baking soda - 1/4 tsp
- dry yeast - 2 pkg
- all-purpose flour, divided - 6 c
- vegetable cooking spray - 1 item
- 1% low-fat milk - 2 c
- yellow cornmeal, divided - 1 Tbsp
How to make english muffin bread:
Combine 3 cups flour and next four ingredients in a medium bowl. Stir well and set aside. Heat milk and water in a heavy saucepan until very warm (120° to 130°). Add to dry ingredients, stirring well. Stir in remaining 3 cups flour to form soft dough.Divide dough into 3 equal portions. Place 1 portion in each of 3 (13 ounce) coffee cans coated with cooking spray and each sprinkled with 3/4 teaspoon cornmeal. Sprinkle remaining cornmeal evenly over tops of dough. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in bulk. Bake at 400° for 20 minutes or until lightly browned. Remove bread from cans and cool on wire racks. Yields 3 loaves, 10 servings each (serving size 1 half-inch slice).
