Ingredients/Components
- pkg - 1 oz
- salt
- water - 1/2 c
- oil - 1 item
- 8 oz - 2 c
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- chili powder - 1 Tbsp
- ground beef - 1 lb
- can tomato paste - 1 oz
- can tomatoes - 1 oz
How to make enchiladas:
Brown meat; drain. Add tomatoes, tomato paste, water, onion and seasoning; simmer 10 minutes. Fry tortillas in hot oil until softened; drain.Place rounded tablespoonful of meat sauce and cheese on each tortilla; roll up tightly. Place, seam side down, in a 11 3/4 x 7 1/2-inch baking dish. Top with remaining sauce and cheese. Cover with aluminum foil; bake at 375° for 25 minutes. Makes 6 to 8 servings.
To make ahead: Prepare recipe as directed. Cover; refrigerate overnight. Bake at 375° for 50 minutes.
