Ingredients/Components

  • salt - 1 item
  • flour - 1 c
  • oil - 2 Tbsp
  • egg - 1 item
  • pepper - 1 item
  • chili powder - 2 Tbsp
  • corn meal - 1/2 c
  • cheese, coarsely grated - 1/2 lb
  • Sauce:2 cans tomatoes

How to make enchiladas:

Fry 1/3 cup each in ungreased pan.Sauce:2 cans tomatoes2 Tbsp. flour2 Tbsp. oil salt pepper2 Tbsp. chili powder1/2 lb. cheese, coarsely grated Mash tomatoes and combine other ingredients. Let simmer while frying tortillas.

Dip tortillas in sauce and put cheese in center. Roll up and put in small baking dish. This makes 9.

Pour remainder of sauce over and sprinkle with remaining cheese. Bake at 350° for 15 or 20 minutes until warm and cheese melts.
