Ingredients/Components

  • oil - 1/2 c
  • can tomato sauce - 15 oz
  • shredded lettuce - 1 item
  • grated cheese - 1 c
  • onion - 1 item
  • shredded cheese - 1 item
  • tortillas - 12 item
  • can enchilada sauce - 1 item
  • small can ripe olives - 1 item
  • hard cooked egg - 1 item
  • hamburger or chicken

How to make enchiladas:

Brown hamburger, drain. Fry tortillas lightly in hot oil. Dip into enchilada and tomato sauce (mixed together). Place meat, onions and olives on tortillas, sprinkle with cheese. Roll and place in oiled baking dish, seam side down. Pour remaining sauce on top. Bake in 350° oven until bubbly (about 15 to 20 minutes). Sprinkle with grated cheese and serve immediately. Garnish each enchilada with shredded lettuce and hard cooked egg, if desired.
