Ingredients/Components

  • salt - 1/2 tsp
  • chili powder - 1 tsp
  • grated cheese - 1/2 lb
  • pepper to taste - 1 item
  • can chili without beans - 1 item
  • large onion, chopped - 1 item
  • ground chuck - 1 lb
  • flour tortillas - 8 item
  • red pepper optional - 1 item
  • additional chopped onion - 1 item
  • can El Paso enchilada sauce optional - 1 item

How to make enchiladas:

Saute onion and ground meat until meat is brown and onions are tender. Add chili and seasonings. On each tortilla, put a small amount of meat mixture, cheese and onion. Roll up and place in baking dish. Pour remaining meat sauce on top, more onion and top with cheese. Bake at 350° until cheese melts or if sauce seems too dry or there is not enough to cover the tortillas, use a can of El Paso enchilada sauce.
