Ingredients/Components

  • Velveeta cheese - 1 lb
  • ground beef - 2 lb
  • can Ro-Tel tomatoes - 1 item
  • salt and pepper to taste - 1 item
  • can cream of mushroom soup - 1 item
  • garlic salt to taste - 1 item
  • corn tortillas - 1 pkg
  • large onion - 1 item
  • cans Ranch Style beans - 2 item

How to make enchilada pie:

Line large rectangular pan with about 9 tortillas. Brown ground beef and onion; add seasonings. Pour meat mixture over tortillas. Mix together beans with cubed cheese. Pour over other mixture. Cut remainder of tortillas in strips and place on pie. Mix together Ro-Tel and soup. Pour over pie. Cook for 30 minutes at 275°, then turn oven down to 250° and cook for an additional 30 minutes.
