Enchilada pie
Ingredients/Components
- Velveeta cheese - 1 lb
- ground beef - 2 lb
- can Ro-Tel tomatoes - 1 item
- salt and pepper to taste - 1 item
- can cream of mushroom soup - 1 item
- garlic salt to taste - 1 item
- corn tortillas - 1 pkg
- large onion - 1 item
- cans Ranch Style beans - 2 item
How to make enchilada pie:
Line large rectangular pan with about 9 tortillas. Brown ground beef and onion; add seasonings. Pour meat mixture over tortillas. Mix together beans with cubed cheese. Pour over other mixture. Cut remainder of tortillas in strips and place on pie. Mix together Ro-Tel and soup. Pour over pie. Cook for 30 minutes at 275°, then turn oven down to 250° and cook for an additional 30 minutes.Recipe categories: Main dish, One Dish meal, Savory pies.
