  • bell peppers - 3 item
  • cloves garlic - 2 item
  • can tomatoes - 1 oz
  • ground beef - 2 lb
  • salt and pepper - 1 item
  • red wine vinegar - 1 Tbsp
  • cumin - 2 tsp
  • oregano - 1 tsp
  • flour tortillas - 6 item
  • fresh jalapeno peppers - 2 item
  • Cheddar cheese - 3 oz
  • Monterey Jack cheese about 3/4 c - 3 oz

How to make enchilada pie:

Heat oven to 350°. Slice onions and bell peppers. Mince garlic. Drain tomatoes. Cook beef in large frying pan until no longer pink. Remove with a slotted spoon. Add onions, bell peppers, garlic, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. C
