Ingredients/Components

  • ground beef - 1 lb
  • onion, chopped - 1 item
  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • chili powder - 1 Tbsp
  • can tomato sauce - 1 oz
  • corn tortillas - 6 item
  • can chopped ripe olives - 1 1/2
  • shredded sharp Cheddar cheese
  • water - 1 c

How to make enchilada pie:

Brown ground beef and onion; add seasonings and tomato sauce. In a 2-quart casserole, alternate layers of tortillas, meat sauce, olives and cheese.

Add water. Cover and bake in a 400° oven for 20 minutes. Cut into wedges with a sharp knife. Use a pie server to remove each serving. Serves 6.
