Ingredients/Components
- small onion, diced - 1 item
- hamburger or cooked, diced chicken - 1 1
- grated Colby or Longhorn cheese - 1 c
- corn tortillas, dipped and cooked in hot oil - 1 item
How to make enchilada casserole:
Brown hamburger and drain fat. In a casserole dish, spray bottom with nonstick spray. Cover the bottom with 1 cup of green chile mixture. Layer with corn tortillas, then sprinkle hamburger or chicken, onions and cheese, then cover with more green chile. Repeat layers of corn tortillas, hamburger, cheese and chile two times.
