How to make el rancho chicken:

Sauce:4 Tbsp. butter4 Tbsp. flour1 c. milk1/4 tsp. pepper1/2 tsp. salt1/2 tsp. garlic powder2 c. canned tomatoes, chopped1/2 c. green chilies, chopped Layers:1 onion, chopped12 corn tortillas2 c. grated Cheddar cheese Optional Ingredients Include:1 diced bell pepper2 oz. chopped pimentos1/2 lb. sliced mushrooms In large pot, place chickens and cover with water. Simmer for 45 to 60 minutes, until tender. Allow to cool. Remove skin and bone. Reserve stock. Preheat oven to 350°. In large saucepan over low heat, melt butter. Add flour and blend until smooth. Combine 1 cup reserved stock with milk and gradually add to flour mixture, stirring constantly, until thickened. Remove from heat and season with salt and garlic. Stir in tomatoes, chilies and onion. Set aside. Bring remaining chicken stock to boil. Dip each tortilla in stock to soften. Cut into 2-inch strips.

To assemble casserole: Cover bottom of a 9 x 13-inch ovenproof casserole with 1/3 of tortilla strips. Layer half of chicken over tortillas and top with 1/2 of creamed tomato mixture. Sprinkle 1 cup of cheese over sauce. Add another layer of tortillas; top with remaining chicken. Spoon on remaining sauce. Top with remaining tortillas. Sprinkle with cheese. Bake 30 to 40 minutes or until sauce is bubbly and cheese has melted. Makes 8 servings.
