  • salt - 1/8 tsp
  • egg yolks - 2 item
  • boiling water - 1/3 c
  • lemon juice - 2 Tbsp
  • English muffins - 6 item
  • few grains pepper - 1 item
  • poached eggs - 12 item
  • thin slices broiled or fried ham - 12 item
  • Cover with ham

How to make eggs benedict:

Split, toast and butter English muffins. Cover with ham. Top each half muffin with 1 poached egg. Pour Hollandaise Sauce over all. Makes 6 servings.Hollandaise Sauce:1/3 c. butter2 egg yolks1/8 tsp. salt few grains pepper1/3 c. boiling water2 Tbsp. lemon juice Melt butter in double boiler. Remove top section of double boiler. Add yolks, 1 at a time, to melted butter, stirring with wooden spoon until thoroughly blended. Add salt and pepper. Add boiling water slowly while stirring. Set over hot water again. Heat slowly, stirring constantly, until mixture is thick and custard like (about 10 minutes). Do not let water boil. Remove sauce form heat, then stir in lemon juice. Serve at once.
