Eggs benedict
Ingredients/Components
- English muffins 6 - 1 pkg
- lean slices ham, cut thick - 6 item
- eggs, poached - 6 item
- milk - 1/2 c
- slices mild Cheddar cheese - 6 item
- lemon juice - 1 Tbsp
- each: salt and pepper - 1/4 tsp
- Set the oven to 350° for 7 minutes
- flour - 1/4 c
How to make eggs benedict:
Heat muffins and ham separately in foil. Set the oven to 350° for 7 minutes.Sauce (Basic White Sauce):3 Tbsp. butter (more if desired)1/4 c. flour Mix well flour and butter over medium heat. Add milk; cook to desired consistency (add more milk if you want it thinner). Add Cheddar cheese; mix until melted (may add more or less cheese to your choice). Add lemon juice, salt and pepper to taste. Let set on warm.Poach eggs. (If you don't have a poacher, use a frying pan 1/4 filled with water, plus 1 teaspoon vinegar. Crack eggs when water is bubbling on the bottom of pan; cover and cook until it looks ready.) Remove ham and muffins from oven. Butter muffins. Place ham next, then eggs, then sauce over tops and sides. Makes 6 servings.
