Ingredients/Components
- egg, beaten - 1 item
- garlic powder - 1/4 tsp
- olive or vegetable oil - 1 item
- Parmesan cheese - 1 Tbsp
- bread crumbs - 1 item
- salt and pepper to taste - 1 item
- parsley - 1/2 tsp
- mushrooms, diced - 1/2 c
- eggplant, diced - 1 item
How to make eggplant patties:
Steam eggplant in water 1/2 hour. Drain and mash. Add egg, mushrooms, cheese and seasoning. Add bread crumbs to make firm patties. Fry in hot oil until brown on both sides.Recipe categories: Vegetables, Main dish, Greek.
