Ingredients/Components

  • Parmesan cheese - 1 item
  • pepper to taste - 1 item
  • salt to taste - 1 item
  • garlic salt to taste - 1 item
  • tomatoes - 1 c
  • minced onions - 1/2 c
  • large eggplant - 1 item
  • minced green onions - 1/2 c
  • cheese, cut in cubes - 1/4 1/2
  • about 3 slices of bread, cut in cubes

How to make eggplant parmesan:

Saute onions and green peppers in oil or bacon fat. Peel and cut eggplant into 1/2-inch cubes. Heat in small amount of water in covered pan about 5 minutes; stir occasionally. Drain. Add tomatoes. Add bread cubes until some juice is taken up. Add onions and peppers. Mix in cheese cubes. Sprinkle with garlic salt, salt and pepper. Put into casserole dish. Add Parmesan cheese on top. Bake for 30 minutes at 350°.
