Ingredients/Components
- vegetable oil - 1 Tbsp
- grated Parmesan cheese - 3 Tbsp
- chopped onion - 1/2 c
- mushrooms, sliced - 1 pt
- part-skim Ricotta cheese - 8 oz
- jar spaghetti sauce - 1 1/2
- lasagna noodles - 9 item
- shredded part-skim Mozzarella cheese - 4 oz
How to make eggplant lasagna:
In large nonstick skillet sprayed with nonstick cooking spray, brown eggplant slices; set aside. In same skillet in hot oil, cook onion about 3 minutes, stirring occasionally.
