  • eggs, beaten - 2 item
  • baking powder - 1 tsp
  • salt to taste - 1 item
  • medium onion, chopped - 1 item
  • medium to large eggplant - 1 item

How to make eggplant fritters:

Cook eggplant in boiling water until tender. Drain. Add onion, baking powder, salt, eggs and enough flour to make a batter stiff enough to drop by tablespoons into hot oil. Cook until golden brown, turning just once. Drain on paper towels.
