- medium cloves garlic, crushed - 2 item
- chopped, toasted almonds - 1 c
- oil for frying tortillas - 1 item
- veggies - 1 item
- olive oil for sauteing vegetables - 2 3
- cubed eggplant approximately 2 small eggplant - 6 c
How to make eggplant enchiladas:
Preheat oven to 350°. Saute onions and garlic in olive oil in a large skillet. Add salt. Cook over medium heat, stirring occasionally for about 5 minutes. Add eggplant. Cut into 1/2-inch cubes. Mix. Cover and cook about 10 minutes or until eggplRecipe categories: Potato, Vegetables, Main dish.
