How to make eggplant enchiladas:

Preheat oven to 350°. Saute onions and garlic in olive oil in a large skillet. Add salt. Cook over medium heat, stirring occasionally for about 5 minutes. Add eggplant. Cut into 1/2-inch cubes. Mix. Cover and cook about 10 minutes or until eggpl
