  • milk - 1 c
  • salt - 1 tsp
  • butter - 6 Tbsp
  • eggs, beaten - 2 item
  • sage - 1/4 tsp
  • onion, chopped - 1 Tbsp
  • cracker crumbs - 1 c
  • American cheese, cubed - 1 c
  • black pepper - 1/4 tsp
  • cooked eggplant, cubed - 2 c

How to make eggplant casserole:

Add butter to hot eggplant; mix until melted. Add remaining ingredients; mix well. Pour into greased casserole dish. Bake at 325° until center rises, about 30 minutes. Makes 6 to 8 servings.
