- eggs - 2 item
- milk - 1 c
- grated Cheddar cheese - 1/2 c
- onion, chopped - 1 item
- eggplant - 1 item
- seasoned dressing mix for cracker crumbs - 8 oz
- grated cheese your favorite - 1 c
How to make eggplant casserole:
Cook cubed, peeled eggplant and onions in a small amount of water until tender. Drain. Mix with milk, eggs, 1/2 cup cheese and dressing in a greased 2-quart casserole. Bake for 35 minutes at 350°.
