  • eggs - 2 item
  • milk - 1 c
  • grated Cheddar cheese - 1/2 c
  • onion, chopped - 1 item
  • eggplant - 1 item
  • seasoned dressing mix for cracker crumbs - 8 oz
  • grated cheese your favorite - 1 c

How to make eggplant casserole:

Cook cubed, peeled eggplant and onions in a small amount of water until tender. Drain. Mix with milk, eggs, 1/2 cup cheese and dressing in a greased 2-quart casserole. Bake for 35 minutes at 350°. Add remaining cheese to top and cook 10 minutes longer.
