Ingredients/Components

  • eggs - 4 item
  • salt - 1 tsp
  • stick margarine - 1 item
  • pepper - 1/2 tsp
  • can cream of mushroom soup - 1 item
  • medium onion, chopped - 1 item
  • medium eggplant, peeled and sliced - 1 item
  • sharp cheese, grated
  • Ritz cracker crumbs

How to make eggplant casserole:

Cook eggplant until mushy; drain and add remaining ingredients. Reserve 1/2 cup cheese, 1/2 cup cracker crumbs and small amount of butter for topping. Mix well and pour in baking dish. Sprinkle cheese and cracker mixture on top. Bake at 350° for 30 to 40 minutes; or until brown.
