Eggplant casserole
Ingredients/Components
- eggs - 4 item
- salt - 1 tsp
- stick margarine - 1 item
- pepper - 1/2 tsp
- can cream of mushroom soup - 1 item
- medium onion, chopped - 1 item
- medium eggplant, peeled and sliced - 1 item
- sharp cheese, grated
- Ritz cracker crumbs
How to make eggplant casserole:
Cook eggplant until mushy; drain and add remaining ingredients. Reserve 1/2 cup cheese, 1/2 cup cracker crumbs and small amount of butter for topping. Mix well and pour in baking dish. Sprinkle cheese and cracker mixture on top. Bake at 350° for 30 to 40 minutes; or until brown.Recipe categories: Side dish, Vegetables, Casseroles.
