Ingredients/Components
- chopped green onions - 1 c
- diced celery - 1/2 c
- hot sausage, cooked and drained - 1 lb
- stewed tomatoes, drained - 1 c
- diced pepper - 1/2 c
- sharp cheese, cut into small pieces - 1 c
- to 6 slices bread, toasted and cut into small pieces - 5 item
- medium eggplant, cubed and parboiled - 1 item
How to make eggplant casserole:
Grease 2-quart baking dish; cover bottom with bread pieces. Top with eggplant, celery, pepper and onions, sausage and tomatoes. Cover and bake at 350° for 45 minutes. Add remaining bread crumbs and cheese. Return to oven 3 or 4 minutes until cheese melts.Recipe categories: Side dish, Vegetables, Casseroles.
