Ingredients/Components

  • can tomato sauce - 1 oz
  • ground beef - 2 lb
  • shredded Cheddar cheese - 2 c
  • salt and pepper to taste - 1 item
  • small onion, chopped - 1 item
  • basil leaves - 1 tsp
  • small green pepper, chopped - 1 item
  • saltine cracker crumbs - 1 c
  • boiled eggplant - 2 c

How to make eggplant casserole:

Brown ground beef, onions and peppers until onion and peppers are tender. Drain. Add eggplant, cracker crumbs, tomato sauce, salt, pepper, basil leaves and half of the cheese. Pour into a baking dish. Top with remaining cheese and bake in a 350° oven for 30 minutes or when cheese is a golden brown.
