Eggplant casserole
Ingredients/Components
- can tomato sauce - 1 oz
- ground beef - 2 lb
- shredded Cheddar cheese - 2 c
- salt and pepper to taste - 1 item
- small onion, chopped - 1 item
- basil leaves - 1 tsp
- small green pepper, chopped - 1 item
- saltine cracker crumbs - 1 c
- boiled eggplant - 2 c
How to make eggplant casserole:
Brown ground beef, onions and peppers until onion and peppers are tender. Drain. Add eggplant, cracker crumbs, tomato sauce, salt, pepper, basil leaves and half of the cheese. Pour into a baking dish. Top with remaining cheese and bake in a 350° oven for 30 minutes or when cheese is a golden brown.Recipe categories: Side dish, Vegetables, Casseroles.
