  • seasoned bread crumbs - 1 item
  • eggplant, peeled and cut into fingers - 1 item
  • Egg Beaters fat-free eggs - 1 pkg

How to make eggplant appetizer:

Dip eggplant fingers into Egg Beater liquid and then into crumbs. Make sure they are covered on all sides. Line up on ungreased pans and bake at 350° for 30 minutes or until tender.
