Eggnog fudge
Ingredients/Components
- sugar - 2 c
- vanilla extract - 1 tsp
- butter - 2 Tbsp
- corn syrup - 1 Tbsp
- semi-sweet chocolate pieces - 2 Tbsp
- chopped pecans or walnuts - 3/4 c
- eggnog commercial - 1 c
How to make eggnog fudge:
Butter bottom and sides of an 8 x 4 x 2-inch pan and set aside. Butter the sides of a heavy, 2-quart saucepan.In saucepan, place the sugar, eggnog and corn syrup. Cook and stir over medium heat until sugar dissolves and mixture comes to a boil. Clip candy thermometer to side of pan and cook to 238° (soft ball stage). Immediately remove from heat and stir in 2 tablespoons butter and vanilla. Cool to 110° without stirring. Beat until mixture becomes very thick and starts to lose its gloss. Quickly stir in nuts. Spread in prepared pan.
In a glass, 1-cup measure, combine chocolate pieces and 2 teaspoons butter. Set in a saucepan filled with 1 inch of water. Heat until chocolate melts. Drizzle over top of fudge and score into squares while warm. Cut when cool.
