  • sugar - 1 c
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 2 c
  • oil - 1/2 c
  • cocoa - 1/4 c
  • baking soda
  • nuts optional - 1/2 c
  • finely grated zucchini - 2 c

How to make eggless zucchini brownies:

Mix together in a large bowl the flour, sugar, baking soda, salt, cocoa and nuts (optional). Then add zucchini, oil and vanilla. Mix by hand until moistened. Pour in a well-greased 9 x 13-inch baking dish. Bake at 350° for 25 minutes.
