  • flour - 1 c
  • water - 1 c

  • container Cool Whip - 1 (8
  • vanilla instant pudding

How to make eclair cake:

Filling:1 small pkg. vanilla instant pudding1 1/4 c. milk1 (8 or 9 oz.) container Cool Whip1 tsp. vanilla Frosting:3 Tbsp. margarine3 sq. unsweetened chocolate3 Tbsp. milk1 1/2 c. powdered sugar1/2 tsp. vanilla Dough: Bring water and margarine to a boil. Stir in flour over low heat until dough forms a ball. Remove from heat and beat in eggs, one at a time, with electric mixer. Spoon onto greased cookie sheet to form an oblong ring. (Note: Dough puffs up a lot so do not put it close to the edges.) Bake at 400° for about 40 to 50 minutes (until golden brown and top cracks). Cool away from draft. When cool, slice top half off.

Filling: Beat vanilla pudding with milk; add Cool Whip and vanilla. Spoon the mixture onto bottom half of dough. Place top half on top of dough and filling.

Frosting: Melt margarine, chocolate and milk. Stir in by hand powdered sugar and vanilla. Drizzle on top of cake. Store in refrigerator.
