  • vanilla - 1 tsp
  • milk - 3 Tbsp
  • cocoa - 3 Tbsp
  • powdered sugar
  • Cool Whip - 1 (9
  • margarine
  • graham crackers - 1 item
  • instant French vanilla pudding - 2 pkg
  • milk do not use 1% or skim milk

How to make eclair cake:

Glaze:3 Tbsp. margarine3 Tbsp. cocoa1 1/2 c. powdered sugar1 tsp. vanilla3 Tbsp. milk Line bottom of 9 x 13 pan with whole graham crackers. Prepare the pudding according to instructions, using only 3 1/2 cups of milk. Fold Cool Whip into the pudding. Spread half over the crackers. Put on another layer of crackers, then put rest of Cool Whip/pudding mixture. Top with another layer of crackers. Refrigerate 2 hours before frosting with chocolate glaze.

Glaze: Melt over low heat the margarine. Add cocoa; mix well. Remove from heat. Add remaining ingredients and mix well. Pour over crackers and refrigerate.
