Easy refrigerator pickles



  • sugar
  • salt - 1/2 tsp
  • celery seed - 1/2 tsp
  • white vinegar
  • mustard seed - 1/2 tsp
  • ground turmeric - 1/2 tsp
  • thinly sliced onions - 2 c
  • thinly sliced cucumbers - 6 c

How to make easy refrigerator pickles:

In a glass or crockery bowl, alternately layer sliced cucumbers and onions. In a medium saucepan, combine sugar, vinegar, salt, mustard seed, celery seed and turmeric. Bring to a boil, stirring, just until sugar is dissolved. Pour vinegar mixture atop cucumber-onion mixture; cool slightly. Cover tightly. Refrigerate at least 24 hours before serving. Store up to one month in refrigerator. Makes 7 cups.
