Easy chicken gumbo
Ingredients/Components
- salt - 1 tsp
- butter - 3 Tbsp
- snipped parsley - 1 Tbsp
- dash of pepper - 1 item
- small bay leaf - 1 item
- can whole tomatoes - 1 item
- small green pepper, chopped - 1/2 item
- chicken or turkey broth - 4 c
- cut up cooked chicken or turkey - 2 c
- can cut okra, drained - 1 item
How to make easy chicken gumbo:
Heat butter in 3-quart saucepan until melted. Add okra, onion and green pepper. Cook and stir until onion is tender. Stir in broth, tomatoes (with liquid), bay leaf, salt and pepper. Heat to boiling. Reduce heat and simmer, uncovered, 15 minutes. Stir in chicken and parsley. Heat through. Serve chicken mixture over hot rice.Recipe categories: Main dish, Gumbo, Stew.
