Easy chicken gumbo



  • salt - 1 tsp
  • margarine or butter - 3 Tbsp
  • dash of pepper - 1 item
  • small onion, chopped - 1 item
  • hot cooked rice - 3 c
  • small bay leaf - 1 item
  • can whole tomatoes - 1 oz
  • small green pepper, chopped - 1/2 item
  • chicken or turkey broth - 4 c
  • can cut okra, drained I use fresh okra in season - 1 oz
  • cut up cooked chicken or turkey - 2 c
  • snipped parsley optional - 1 Tbsp

How to make easy chicken gumbo:

Heat margarine in 3-quart saucepan until melted. Add okra, onion and green pepper; cook and stir until onion is tender. Stir in broth, tomatoes (with liquid), bay leaf, salt and pepper. Heat to boiling; reduce heat. Simmer, uncovered, 15 minutes. Stir in chicken and parsley; heat through. Serve chicken mixture over rice. Makes 6 servings.
