Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg
  • salt - 1 tsp
  • flour - 2 c
  • stick margarine - 1 item
  • oil
  • grated carrots - 3 c
  • baking soda - 2 tsp
  • nuts optional - 1 c
  • box powdered sugar - 1 item

How to make easy carrot cake:

Icing:1 (8 oz.) pkg. cream cheese, softened1 stick margarine1 box powdered sugar1 tsp. vanilla Cake: MIX BY HAND. Mix sugar, flour, baking soda, salt and cinnamon together. Add oil and eggs. Mix well, then stir in carrots and nuts (if desired). Bake at 350° in a 9 x 13-inch greased pan for 30 to 35 minutes.

Icing: Combine cream cheese, margarine, sugar and vanilla together until mixed well. Spread on cooled cake.
