  • flour - 1 c
  • whole wheat flour - 1 c
  • sugar - 1/2 c
  • wheat germ - 2 Tbsp
  • baking powder - 1 Tbsp
  • nutmeg - 1/4 tsp
  • finely chopped apples - 1 c
  • raisins - 1/2 c
  • apple juice - 1 c
  • oil - 1/3 c
  • egg, beaten - 1 item

How to make double apple muffins:

Heat oven to 400°. Lightly spoon flour into measuring cup; level off. In large bowl, combine first 6 ingredients. Add apples and raisins. Stir in apple juice, oil and eggs until moistened. Spoon batter into muffin cups, filling 3/4 full. Bake for 20 to 25 minutes or until golden brown. Immediately remove from pans. Serve warm.
