  • vegetable oil - 1 tsp
  • pepper - 1/8 tsp
  • grated Parmesan cheese - 1 Tbsp
  • chopped fresh parsley - 1 Tbsp
  • Dijon mustard - 2 tsp
  • each - 2 pork
  • plain dried bread crumbs - 4 Tbsp

How to make dijon pork chops:

In shallow mixing bowl, combine bread crumbs, Parmesan cheese, parsley, oil and pepper. Mix well and set aside. Spread both sides of each pork chop with Dijon mustard; then press each pork chop into the bread crumb mixture, coating both sides and using all of the mixture. Spray rack of broiling pan with nonstick cooking spray and arrange pork chops on rack. Broil 5 to 6 inches from heat source, turning once, until thoroughly cooked and lightly browned (5 to 6 minutes on each side). Yields 2 servings.
