Diabetic spice cake
Ingredients/Components
- cinnamon
- vanilla - 1 tsp
- flour - 2 c
- water - 2 c
- nutmeg - 1/2 tsp
- baking soda - 1 tsp
- cooking oil - 3/4 c
- raisins - 2 c
- eggs, lightly beaten - 2 item
- unsweetened applesauce - 1 c
- liquid sweetener - 2 Tbsp
How to make diabetic spice cake:
Cook raisins in the water until all the water is absorbed. Add applesauce, eggs, sweetener and oil. Mix well. Blend in soda and flour. Add remaining ingredients. Mix well. Turn dough into a well-greased and floured tube or Bundt pan. Bake at 350° for 50 to 60 minutes. Yields 20 servings, about 150 calories per serving.Recipe categories: Desserts, Cakes, Southern u.s..
