Deviled crab
Ingredients/Components
- milk - 3/4 c
- salt - 1/2 tsp
- flour - 2 Tbsp
- lemon juice - 1 Tbsp
- egg, beaten - 1 item
- Worcestershire sauce - 1 tsp
- chopped onion - 2 Tbsp
- sage - 1/2 tsp
- dash of pepper - 1 item
- chopped parsley - 1 Tbsp
- dash of cayenne pepper - 1 item
- dry bread crumbs - 1/4 c
- crabmeat - 1 lb
- powdered mustard - 1/2 tsp
- butter or other fat, melted - 3 Tbsp
How to make deviled crab:
Remove any shell or cartilage from crabmeat. Cook onion in butter until tender. Blend in flour. Add milk gradually and cook until thick, stirring constantly. Add seasonings and lemon juice. Stir a little of the hot sauce into egg; add to remaining sauce, stirring constantly. Add parsley and crabmeat. Place in 6 well-greased individual shells or 5 ounce custard cups. Combine butter and crumbs; sprinkle over top of each shell. Bake in a moderate oven at 350° for 15 to 20 minutes or until brown. Serves 6.Recipe categories: Seafood, Shellfish, Crab.
