  • flour - 3 Tbsp
  • butter - 1/4 c
  • chicken broth - 2 c
  • salt and pepper to taste - 1 item
  • small onion, chopped - 1 item
  • cubed, cooked chicken - 6 c
  • finely chopped celery - 1/4 c
  • mushrooms, quartered - 1/4 lb
  • peas fresh or frozen - 1/2 c
  • small carrots, peeled and sliced - 2 item
  • pinch each: freshly ground black pepper and nutmeg - 1 item
  • Pillsbury prepared pie crust unbaked - 1 item

How to make deep dish chicken pie:

In saucepan over medium heat, melt butter. Add onion and celery and cook until soft. Stir in flour and cook until thickened. Add pepper and nutmeg. Gradually stir in broth, stirring constantly, until mixture thickens. Mix in chicken, peas, mushrooms and carrots. Season to taste. Pour chicken mixture into a 9-inch baking dish, 2-inches deep.

Top with a Pillsbury prepared pie crust, unbaked. Trim pastry and flute edge. Cut slits in crust to allow steam to escape. Bake in a preheated oven at 400° for 30 to 40 minutes, until golden brown.
