Deep-dish apple pie
Ingredients/Components
- sugar
- cinnamon - 1/2 tsp
- all-purpose flour, sifted - 1 c
- salt - 1 tsp
- cornstarch - 1 Tbsp
- water - 1 c
- nutmeg - 1/4 tsp
- cold water - 1 Tbsp
- almond extract - 1 tsp
- lemon juice
- grated lemon rind - 1/2 tsp
- honey - 1/4 c
- plain low-fat yogurt - 1 c
- reduced calorie margarine - 1 item
- apple juice - 1/4 c
- peaches, chopped - 3 c
- small apples, sliced - 4 item
How to make deep-dish apple pie:
Cook peaches, water and honey until peaches are soft; sieve. Stir in lemon juice, almond extract and apple juice. Chill until cool.Whisk yogurt into peach mixture. Pour into an 8 x 8-inch pan; freeze until ice crystals form around edges, about 45 minutes. Stir crystals into middle of pan and return to freezer.
When slightly frozen through, whip mixture until light in color and aerated. Repeat freezing and whipping process again. Spoon into storage container and freeze until firm. Let soften at room temperature for 10 minutes before serving.
Yields 6 servings. Contains 84 calories and 1 gram fat (11% fat).
