  • shortening oleo is fine - 1 c
  • eggs - 2 item
  • sifted flour - 4 c
  • salt - 1/2 tsp
  • sugar - 1 c
  • water - 1 c
  • light brown sugar - 2 c
  • vanilla extract - 1 tsp
  • baking soda - 1/2 tsp
  • pecans - 1 c

How to make date pinwheels:

Make filling first by combining and cooking down until thick (like preserves) dates, 1 cup sugar and 1 cup water. Stir in one cup chopped pecans when mixture is cooled.

In the meantime, cream together for cookie dough, per usual, shortening and brown sugar. Add eggs and vanilla, beating well. Sift flour, baking soda and salt together, then add to dough mixture, mixing until smooth. Dough will probably be a little soft to roll out easily, so chill a while. When firm, divide into 3 pieces and roll out between 2 piece of wax paper into rectangle 1/4-inch thick. Spread cooked mixture on rolled dough. Roll up like jelly roll, wrap in wax paper and chill. Repeat for each roll. Refrigerate or freeze for use later if desired.

To bake, slice cookies 1/4 inch thick and place on greased cookie sheet. Bake at 375° for 12 to 15 minutes. Remove at once and cool.

Variation: 3 eggs. Bake at 400° for 7 to 12 minutes.
