Ingredients/Components

  • vanilla - 1 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • brown sugar - 2 c
  • water - 1/2 c
  • chopped dates
  • baking powder - 3 tsp
  • margarine - 1 c
  • eggs or Egg Beaters - 3 item
  • pastry whole wheat flour - 1 c

How to make date pinwheel cookies:

Filling:1/2 c. chopped dates1/2 c. brown sugar1/2 c. water1 c. chopped nuts Cook the filling mixture until thick, except nuts. Add the nuts and set aside to cool.

Beat together the brown sugar, margarine and eggs. Add vanilla and mix. Stir salt, baking powder and flour together until well blended and add to the sugar, margarine and egg mixture. Beat well together. Add extra flour, one cup at a time (about 4 cups or until the dough will roll out easily). Dough should be rather soft. Divide dough into 3 parts. Put each piece on wax paper to roll out 1/2-inch thick. Spread filling mixture over the rolled dough. Roll up into roll. Place a piece of foil at the end and continue to roll. Seal. Chill 4 to 5 hours or overnight. Remove foil. Slice 1/4-inch thick. Bake on greased cookie sheet 10 to 12 minutes at 350°.
