Date nut pinwheels
Ingredients/Components
- granulated sugar - 1 c
- salt - 1/2 tsp
- flour - 4 c
- water - 1 c
- chopped dates
- baking soda - 1/2 tsp
- firmly packed brown sugar - 2 c
- vegetable shortening - 1 c
- eggs, well beaten - 3 item
- chopped pecans or walnuts - 1 c
How to make date nut pinwheels:
Combine dates, granulated sugar and water in a saucepan. Cook over low heat until thick, about 10 minutes. Cool, and then stir in nuts; set aside. Cream shortening. Add sugar gradually. Add eggs and beat well. Sift together flour, salt and soda; add and mix well. Chill thoroughly. Divide mixture in half and roll each section into a rectangle a little less than 1/4-inch thick. Spread date fillings to edges and roll up from long side like a jelly roll. Wrap rolls in waxed paper and chill overnight.To bake, cut rolls with sharp knife into 1/4-inch thick slices. Place on greased cookie sheet about 2-inches apart and bake at 400° for 10 to 12 minutes or until lightly browned. Makes 6 dozen.
