  • eggs - 2 item
  • pkg - 2 oz
  • salt - 1/2 tsp
  • garlic powder - 1/2 tsp
  • pepper - 1/4 tsp
  • oregano - 1 tsp
  • basil - 1/2 tsp
  • chopped parsley - 2 Tbsp
  • jar spaghetti sauce - 1 oz
  • lasagna noodles - 1 pkg
  • onion powder - 1 tsp
  • shredded imitation Mozzarella cheese - 8 12

How to make dairy free lasagna:

Heat oven to 350°. Cook lasagna noodles as package directs. Do not overcook. Drain noodles.

In medium bowl mix tofu, onion powder, garlic, eggs, parsley, oregano, basil, salt and pepper. Spray a 9 x 13-inch pan with nonstick cooking spray. Alternate layers of lasagna noodles, tofu mixture, spaghetti sauce and imitation cheese in that order, ending with cheese. Bake for 45 minutes to 1 hour, until hot and bubbly. Take out and let it set for 5 minutes. Serve with homemade bread or garlic toast. Enjoy.
