Ingredients/Components
- salt - 1/2 tsp
- flour - 1/2 c
- butter - 6 Tbsp
- pepper - 1/2 tsp
- curry powder - 2 tsp
- onion, finely chopped - 1/2 c
- thyme - 1/2 tsp
- clove garlic, crushed - 1 item
- cans stewed tomatoes - 2 oz
- dried currants - 3 Tbsp
- chicken thighs, boned and cut in cubes - 8 item
How to make curry chicken:
Put flour, salt and pepper in a paper bag. Shake chicken in bag until coated. Heat 4 tablespoons of butter in a large pot. Brown the chicken. Add more butter as you need it. Remove chicken; add onion, green pepper, garlic, curry powder and thyme. Cook five minutes. Add tomatoes with the liquid from the can. Add chicken; cook, covered, 20 to 30 minutes.
