Curried cream of pea soup
Ingredients/Components
- half and half - 1 c
- frozen peas - 1 c
- medium onion, diced - 1 item
- cloves garlic - 2 item
- curry powder or to taste - 1 tsp
- fresh ground pepper - 1 item
- chicken stock - 2 c
- carrot, diced - 1 item
- medium potato, peeled and chopped - 1 item
- celery stalk and leaves, chopped - 1 item
- slices bacon, crispy fried - 6 item
How to make curried cream of pea soup:
Fry bacon crisp. Remove and drain. Cook all vegetables and garlic except peas in bacon fat until soft. Add curry and pepper, then 1/2 the chicken stock and peas. Simmer for 15 minutes. Puree in batches; return to pot. Whisk in remaining stock and half and half. Simmer on low until hot. Ladle into bowls.
