Curried chicken salad
Ingredients/Components
- curry powder - 1 tsp
- mayonnaise - 1 c
- low sodium soy sauce - 1 Tbsp
- celery, diced - 1 c
- can mandarin oranges, drained - 1 oz
- cooked chicken, diced - 3 c
- fresh lemon juice - 1 Tbsp
- seedless grapes - 1 c
- salt may be omitted - 1 tsp
How to make curried chicken salad:
Combine chicken, celery, salt and lemon juice. Add 1/2 cup grapes (may be cut in half) and half of oranges to chicken mixture.Combine mayonnaise, curry powder and soy sauce to make salad dressing. Toss dressing with chicken mixture. Refrigerate at least 2 hours. Serve on greens garnished with remaining oranges and grapes.
