Cucumber lime pickles
Ingredients/Components
- sugar - 8 c
- salt - 1 Tbsp
- water - 2 gal
- vinegar - 8 c
- pickling lime - 2 c
- mixed pickling spice - 2 tsp
- cucumbers, sliced crosswise - 7 lb
How to make cucumber lime pickles:
Soak cucumbers in water and lime mixture in crockery or enamelware overnight. (Do not use aluminum ware.) Wash 3 times in clean water and soak in fresh ice water for 3 hours. Combine remaining ingredients and bring to a low boil. Stir until sugar is dissolved. Add cucumbers and soak overnight. Boil pickles in liquid for 35 minutes.
