Ingredients/Components

  • salt - 1 tsp
  • pepper - 1/8 tsp
  • medium onion, chopped - 1 item
  • slices bacon - 6 item
  • medium tomatoes, peeled and chopped - 6 item
  • cups water - 2 item
  • cup bread crumbs - 1 item
  • medium bell peppers, chopped - 2 item
  • large cucumbers, peeled and sliced - 6 item
  • cup shredded American or Cheddar cheese - 1 item
  • Hot cooked rice, optional - 1 item

How to make cucumber casserole:

Combine cucumbers and water in a saucepan, bring to a boil. Cover and simmer 15 minutes or until tender. Drain well. Cook bacon until crisp, drain, reserving 3 tbsp. drippings. Crumble bacon, set aside.

Saut?© onion and green pepper in reserved bacon drippings 5 minutes, drain well on paper towels. Combine vegetables, bacon crumbs, salt and pepper. Spoon into a 2 quart casserole. Sprinkle with cheese. Bake at 350° for 30 minutes. Serve over rice if desired.
