  • sugar - 1/4 c
  • salt - 1 item
  • butter - 2 Tbsp
  • egg - 1 item
  • vinegar - 1/4 c
  • large cucumbers - 4 item
  • large sweet onion - 1 item

How to make cucumber and onion salad:

The night before or early in the day on which you wish to serve the salad, slice alternate layers of sweet onion and cucumber, sprinkling salt between each layer. Cover tightly and place in refrigerator to wilt.

When ready to serve, melt butter in saucepan. Beat in egg. Add sugar and vinegar and mix. Cook on medium heat and continue mixing, stirring constantly, until sauce thickens. Drain water from the cucumbers and pour on the sauce. Enjoy! Good hot or cold. Add fresh tomato slices to any leftover sauce.
